Wicked Good Chili
Easy, fast, nutritious and fiber fueled, this chili is great for kids and adults alike. If you donβt like slightly spicy, start with less chili powder and move up from there! Enjoy!
Wicked Good Chili
This chili is so stinkin' easy to make and it's wicked good at the same time π
I love a warm soup and as we head into the cold midwest months, it's essential that I have food like this chili to keep me from freezing every day!
Ingredients
Wicked Good Chili
- 4 Tbs chili powder
- 28 oz canned crushed tomatoes (we use unsalted)
- 1/2 can tomato paste
- 1 cup chopped carrots
- 2 cans rinsed beans of choice (we love kidney, pinto and black!)
- 2 bags of riced cauliflower
- 4 cloves minced garlic
- 2 diced sweet onions
- Salt as desired
- Chopped cilantro to top
Instructions
- Sautee onions, garlic and carrots together until softened a bit and then add cauliflower. Cook all together until slightly browned. Add chili powder and stir. Add tomato paste and stir and then add some of the tomato juice from the canned tomatoes to mix all together until the tomato paste is mixed in and smooth. Add remaining tomatoes and beans and cook until reduced to the thickness that you want! Enjoy with green onions, cilantro, vegan cheese or avocado on top!
