Vegan Animal Crackers
Vegan Animal Crackers….doesn’t that sound backwards? Haha well, regardless of what shapes you make, these easy and oh-so-tasty cracker/cookies are a great swap for your traditional sugar cookie during the holiday season or whenever you want to make a fun snack with your kiddo or simply for yourself!
I use organic sprouted spelt flour for these “crackers” but you can use whatever flour you prefer. These are very slightly green/blue due to the addition of Hawaiian spirulina because Koen wanted to add it to this batch which is something I would never complain about. We’ve got added micronutrients now! Yay!
Vegan Animal Crackers
Ingredients
- 1 cup favorite flour (we use organic sprouted spelt)
- 1 cup soy milk or favorite non-dairy milk (we use eden organic unsweetened)
- 1 tsp aluminum free baking powder
- 1/2 tsp spirulina if you want
- 2 large spotty bananas
- dash of vanilla extract or vanilla bean powder (our fav)
Instructions
- Blend all ingredients together in a food processor just enough to incorporate (this is how I do it because it’s easy for a toddler but can also become tough if you mix it too long so be careful!) Otherwise, using a stand mixer or hand mixer, blend bananas, vanilla and soy milk together then mix spirulina, flour and baking powder together then add that to the wet mixture until combined.
- Roll out the dough onto a floured surface until desired thickness and cut into shapes with your cookie cutters.
- Bake at 400 for 10-20 minutes (I know this is super generic, but it depends on how wet the batter originally was and how thick you rolled them!) or until desired doneness. Ours are usually light golden brown and still a little soft kind of like pita bread when they are fresh (1-2 days old) but then they get harder over time. I store these in a food storage container in the fridge after 2 days or freeze until later use.

- Sidenote: these are fun to dip in date syrup which is just dates and a little water in the Vitamix!
