Green Beans Creamy Almondine
SO, this is not exactly traditional green beans almondine, but I also don’t follow the rules very well lol
Regardless, the beans are paired with almonds and that’s all the matters here. :-)
When I originally started making green beans almondine, the recipe called for pan roasted green beans that were laden with oil and salt and also used roasted almonds instead of raw. Science shows us that roasted nuts are less optimal than raw for a few different reasons (I’ll explain further soon) so we always try to consume raw nuts vs cooking them!

Green Beans Creamy Almondine
Ingredients
- 1 lb or so of fresh green beans (pull the stringy end off of them before cooking)
- 1 tsp onion powder
- 2 garlic cloves
- 1 cup water
- 1/2 cup diced almonds (a smidge more if you are using whole nuts)
- juice of 1 lemon
- 1 tsp oregano
- 2 Tbs nutritional yeast
- salt if you desire
Instructions
- Blanch the green beans in boiling water for about 3 or so minutes. You want them to stay al dente and vibrant so try not to over cook. Strain and set aside. You could also air fry the beans instead if you want a more crispy texture!!
- In the blender, combine onion powder, garlic, water, almonds, lemon juice, oregano, nutritional yeast, and salt if you are using it. Blend until smooth and creamy.
- Drizzle the sauce over the beans and sprinkle with more almonds and nutritional yeast if you want.
