Badass Banana Bread
Need I really say anything?
I don’t know many humans who don’t like banana bread and let me tell you: this is a far cry from the type I used to bake which had eggs, milk, lots of processed sugar other weird things that I don’t eat anymore. lol

Badass Banana Bread
This one happens to be gluten-free although you can make it any way you’d like: with whole wheat, oat, or any other flour that you love!
Ingredients
- 1 cup cassava flour
- 1 cup brown rice flour
- 1 1/2 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt if desired
- 3 big spotty ripe bananas (ideally riper than the picture shows above)
- 1 more banana to cut lengthwise and place on top if you want
- 1 healthy cup pitted Medjool dates
- 1/2 cup unsweetened applesauce
- 1 tsp almond + 1 tsp vanilla extract or just 2 tsp of vanilla
- 1 tsp apple cider vinegar
- 1 cup water
Instructions
- Preheat oven to 350 and place unbleached parchment paper into a large bread loaf pan (9x5 pan ideally or you could make this into muffins and cook for less time). You can also use cooking spray in the pan if you don’t have parchment paper.
- Mix all of the dry ingredients together in a big bowl. Then blend the dates, bananas, applesauce, extracts and vinegar together until well combined and slowly incorporate into the dry ingredients. Mix until batter forms and add up to the entire 1 cup of water if the batter is way too thick. The texture at the end should just fall off of a spoon if you scoop it up and hold it upside down. It’s pretty thick.
- Pour all of the batter into the loaf pan and place the extra banana on there cut side up (if you are using it).
- Pop into the oven for 50-60 minutes on convection or regular bake and wait until a toothpick comes out clean before you pull it out of the oven. Let the banana bread cool all the way in the pan before slicing it up and devouring it.
