Blue Muffin Recipe
Makes: 12 x 2.3oz muffins (2 muffins per portion)
Ingredients: 1 3/4 cups plain, all-purpose flour 1 Tbsp baking powder 1 cup granulated sugar 1/2 cup canola oil 1 cup water 1 tsp vanilla extract 1 tsp (0.2oz) royal blue food dye*
Preheat oven to 325F (170C) Combine flour, baking powder, and sugar in a large bowl. Stir to mix. In a jug, combine canola oil, water, and vanilla extract. Make a well in the center of the flour mixture and pour in wet ingredients. Add the blue food dye to the mixture. Using a whisk, mix until the wet and dry ingredients are well combined and the blue dye is distributed evenly throughout the mixture. Pour or scoop 2.3oz (65g) of batter into each muffin case (the batter should make roughly 12 muffins). Bake for 24-26 mins. Oven temperatures can vary, you’ll know your muffins are ready when a skewer inserted into the center of the muffin comes out clean. Set aside to cool for 20-30 minutes.
