Zucchini Oat Bars (with immune boosting spices)
Zucchini Oat Bars: a perfect multi season snack! 😍 With the summer in full swing, I wanted to highlight the abundant garden zucchini and then decided to add immune boosting spices to make it extra delicious as we head into fall 🌱 Oats are a great source of beta glucan, a type of prebiotic fiber (great for the gut) that has antimicrobial, anticancer & anti-diabetic properties.

Ingredients
- 3 cups organic rolled oats
- 2 cups mulberry or date paste (equal parts dried fruit and water, blended)
- 1 Tbs ground cinnamon
- 1 tsp ground dried ginger
- 1 tsp ground dried turmeric
- 2 cups grated zucchini
- 1 cup water
Instructions
- Preheat the oven to 300F. Stir all ingredients together. Line an 8x8 pan with unbleached parchment paper and pour into pan. Press down with a spatula until smooth. Bake for 35-40 minutes and let cool in the pan. Cut into squares and enjoy. 😉
