Sweet Heat Pulled BBQ
Have you ever tried jackfruit? This is the best pulled pork replacement and it’s made from the young jackfruit, not the mature jackfruit which is much more sweet. Sweet Heat Pulled BBQ
This is a spin on my original BBQ Pulled Jackfruit recipe but with more of a kick and dept with sweetness from dates...no refined sugar needed!
Ingredients
BBQ Jackfruit
- 2 cans young green jackfruit* in brine (not syrup) OR 3 packages (7oz) vacuum packed young organic jackfruit
- 2 Tbs sugar (we use date sugar because it has fiber)
- 1 Tbs smoked or regular paprika
- 1 tsp garlic powder
- 1/2 tsp (up to 1 tsp if you like things HOT) ground cayenne
- 1/2 cup diced sweet onion
- 1/2 tsp salt if desired
- 2 cups red sauce (recipe below)
Red sauce
- 6-8 medjool dates
- 1 jar tomato paste (7 oz)
- 2 Tbs apple cider vinegar
Instructions
- Drain jackfruit and pat dry (if you are using canned) otherwise put jackfruit into a bowl
- Shred some of the jackfruit chunks into smaller pieces (you will definitely need to do this for the canned jackfruit, but not so much for the vacuum packed jackfruit) with your hands and stir in all the dry spices. Set aside.
- In a heavy bottom pan, add some water or veggie broth and saute onions just until slightly translucent. Add seasoned jackfruit and stir all together. Add red sauce and stir until everything is combined. If you need more fluid, add a bit of water. Simmer on low heat, about 20 minutes, stirring occasionally and pulling jackfruit apart as it becomes tender. The canned jackfruit will need a longer cooking time than the vacuum packed one. Regardless, it's already perfectly fine to eat once all ingredients are combined, but the flavors deepen as the sauce gently cooks into the jackfruit.
- Load this into lettuce boats/wraps or you could even stuff a roasted sweet potato with this and call it lunch with a side salad!
