Probiotic Protein Muffins

Let’s face it, most people aren’t eating the perfect diet. It’s one thing to eat processed and animal foods, but another to be void of essential daily nutrients to keep your body energized and brain function on point. Enter my Probiotic Protein Muffins: an easy solution for busy moms who want a fulfilling snack for their kids or themselves.
In this recipe, I use my favorite vegan chocolate protein powder and daily greens & probiotic to get extra immune-boosting benefits and a digestive health bonus.
Probiotic Protein Muffins
Ingredients
Probiotic Protein Muffins
- 1.5 cups water
- 1/2 tsp baking powder
- 1 scoop vegan protein powder
- 1 scoop greens & probiotic powder
- 1/4 tsp vanilla bean powder
- 1/2 cup canned or fresh cooked pumpkin
- 6 juicy medjool dates
- 1 cup rolled oats
- 1/2 tsp baking powder (try getting aluminum free if you can)
Instructions
- This recipe makes 6-8 muffins
- Place all ingredients into a blender and blend until a batter forms. This doesn't take long! Fill large muffin trays with the batter (to the top of the cup as these don't rise that much) and bake at 350 F (on convection if you have that option on your oven) for 20-25 minutes until you can pull a toothpick out cleanly or press the top of the muffin and it springs back a bit.
- Let cool in the muffin pan and enjoy once cooled.
- Double or triple this recipe in your large blender container and freeze for later use to have easy and healthy snacking at any time!
