Not Turkey Noodles
This is not a dish I grew up with at holiday dinners, but I have seen other families eating chicken/turkey noodles from a crockpot in my lifetime so I wanted to recreate it and this one uses a really fun ingredient….jackfruit!! This recipe is made in the instant pot but I am sure you could perhaps create it in the crockpot or maybe even on the stove!
In the instant pot, add:
1.5 cups diced carrots
1 cup diced celery
2 cups diced sweet onion
1 cup water
Turn on the simmer/sautee function while you are grabbing the other ingredients (5 minutes).
Then add:
3 bay leaves
3 minced garlic cloves
3 Tbs poultry seasoning
salt if desired
1 can young green jackruit (I buy trader joes) drained, rinsed and shredded with hands
1 carton low sodium veggie broth
3-4 cups additional water
1 lb pasta (I used large rotini shape for this recipe)
add the remaining ingredients into the instant pot and put the lid on (no need to stir). Hit the pressure cook function and set for 15-25 minutes. I let mine go for really long to achieve this soft noodle texture: way past al dente! lol!
Top with black pepper and dill weed if desired! Enjoy!!
