Chickpea Salad Sandwich
Skip the egg salad for this heart healthy option made with chickpeas instead!
Ingredients
Chickpea Salad Sandwich
- 1 can cooked and drained chickpeas
- 1/4 cup finely chopped shallots or red onion
- 2 Tbs finely chopped celery or fennel bulb
- 2-3 Tbs finely chopped pickles
- 1/4 cup avocado
- 1 Tbs dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp turmeric
- 1 tsp fresh dill or 1/2 tsp dry
- salt if desired
Instructions
- Mash the chickpeas with a fork or potato masher.
- Mix in all the rest of the ingredients and add some lemon juice at the end for a final zip of flavor if you desire!
- Enjoy on a piece of your favorite whole grain bread (sourdough is the best) or try our favorite new find (no sodium Ezekiel!)
