Chickpea Salad Sandwich

Skip the egg salad for this heart healthy option made with chickpeas instead!

Ingredients

Chickpea Salad Sandwich
  • 1 can cooked and drained chickpeas
  • 1/4 cup finely chopped shallots or red onion
  • 2 Tbs finely chopped celery or fennel bulb
  • 2-3 Tbs finely chopped pickles
  • 1/4 cup avocado
  • 1 Tbs dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp turmeric
  • 1 tsp fresh dill or 1/2 tsp dry
  • salt if desired

Instructions

  1. Mash the chickpeas with a fork or potato masher.
  2. Mix in all the rest of the ingredients and add some lemon juice at the end for a final zip of flavor if you desire!
  3. Enjoy on a piece of your favorite whole grain bread (sourdough is the best) or try our favorite new find (no sodium Ezekiel!
