Breakfast Fritatta Cups

How about an IGF-1 and cholesterol free low fat plant based breakfast? I got you, girl.

I was never a huge omelet, fritatta, or quiche person (probably because I just didn’t feel great after eating them), but here we are, with these super satisfying and fiber fueled breakfast cups that are sure to satisfy kids and adults alike. We don’t keep these around for long at all when I make them!!!

With the main ingredient being chickpea flour (just ground up dried chickpeas), this is a stellar way to start the day and remember: beans are one of the healthiest foods in the world!!!

Breakfast Fritatta Cups

  • 2 cups chickpea flour

  • 1/2 cup nutritional yeast (can use less but I love the umami flavor!)

  • 1 tsp baking powder

  • 1 Tbs garlic powder

  • 1 Tbs dried basil (fresh is so delicious as well)

  • 3/4 tsp salt if desired

  • 2-2 1/2 cups water

  • 1 cup frozen or fresh corn

  • 1-2 diced red bell peppers

  • 1-2 diced shallots or 1/2 small red onion

  • 1 cup chopped fresh greens like spinach, chard, collards or kale

  • chopped green onion as desired

  • 1.5 Tbs balsamic vinegar if desired for depth of flavor

  • Black pepper as desired

Preheat oven to 375 F.

Mix chickpea flour with nutritional yeast, baking powder, salt if using, and spices. Wisk in the water then stir in chopped veggies and corn.

Scoop the batter into lined muffin cups (I usually get 12-16 out of this batch depending on high I fill the cups). Top with extra spices if you want.

Bake for at least 35 minutes but honestly, you could be cooking these for up to 55 minutes. It depends on how humid the air is, how fine your garbanzo bean flour is ground, and your oven. Use a toothpick to check it and see if its done. I like them both nice and soft but they are also good when cooked longer and more stiff and crunchy on the sides. Place on cooling rack and let cool completely before attempting to unwrap from their cupcake liner. You could use silicone muffin cups for this if you would like but I do not use them as I haven’t done enough research on their safety yet. Store leftovers in a bowl in the fridge and eat straight up as a snack or you can reheat in the over or toaster oven. Have fun! Mix these up in all sorts of ways with different herbs, spices and veggies!
