BBQ Pulled Jackfruit
BBQ Pulled Jackfruit
Ingredients
- 2 cans young green jackfruit* in brine (not syrup)
- 2 Tbs sugar (we use date sugar because it has fiber)
- 1 Tbs smoked paprika
- 1 tsp garlic powder
- 1 tsp chili powder
- 1/2 cup diced sweet onion
- 1/2 tsp salt if desired
- 1/2 tsp smoked black pepper or regular black pepper
- 3/4 - 1 cup fav healthy BBQ sauce (I make my own with lots of spice!)
- *We get our jackfruit at Trader Joes, but they have cans of young jackfruit at every Asian store and most Asian sections of a general grocery store. This recipe must use young jackfruit or otherwise it'll be wayyyy too sweet.
Instructions
- Drain jackfruit and pat dry unless you are lazy like I am, and if that's the case, then don't worry too much about this step: this is a forgiving recipe.
- Shred some of the jackfruit chunks into smaller pieces with your hands and stir in all the dry spices. Set aside in a bowl.
- In the instant pot or a heavy bottom skillet, add some water or veggie broth and saute your onions just until slightly translucent. Add seasoned jackfruit and stir all together. And bbq sauce and a little water if needed to achieve a saucy situation and cover all of the jackfruit.
- If using an instant pot, set to pressure cook for 5-10 minutes and let the pressure naturally release. Shred even more once its done. If using a pan, simmer on medium-low heat, 20-25 minutes (or more...the longer, the more depth of flavor), stirring occasionally and pulling jackfruit apart as it becomes tender.
- Load this into tacos, make nachos, put onto your favorite sprouted grain bun with cheese and onion sprouts, plop onto cilantro lime rice with scallion and pico, or use as a bbq dip! The possibilities are endless!
