5 Minute Superfood Blender Muffins
This muffin recipe comes together so quickly and is totally kid approved. Packed with phytonutrients, we really got all the goods into this muffin recipe! As always, we have lots of healthy fiber because it’s made with whole plant foods and no refined sugar! The goji berries take it up a notch and really help to make the colors fun! Enjoy!
Superfoods 5 Minute Blender Muffins
Ingredients
Superfoods 5 Minute Blender Muffins
- 2 cups rolled oats
- 2 bananas
- 6 juicy medjool dates (7 if they are small)
- 1 cup water
- 2 Tbs Neogreens
- 1 tsp vanilla bean powder
- 1 tsp ginger
- 1 cup goji berries
Instructions
- Blend all ingredients other than the goji berries in a blender or food processor until just blended (not totally smooth but leave some oat remnants to make the best-finished muffin). Don't stress too much about the texture of the batter because these muffins are hard to mess up!
- Transfer batter to a bowl and stir in the goji berries
- Scoop batter into 8-9 large muffin cups and bake at 350 F for 20-30 minutes until a toothpick comes out clean!
